Our last stop on the food tour was a balsamico factory – we actually ended up having lunch here which was rather yummy.  Anyways, basalmico comes from grape juice – it first turns into wine, and then into balsamic vinegar – which is placed in wooden barrels, of different woods.  The different woods help give it flavor (I think).  However, it takes 15 years to even begin to get any balsamico.  15 years!  And even then, you only get about 1 liter.  Crazy!  And, what’s the most interesting to me, is that the balsamico rotates through a set of barrels (5,6,7), and you only take the balsamico from the smallest barrel.  That being said, this man has 150 year old balsamico!  (taken 20.3.2015)
